2 T. butter
1 lb. lean ground beef
1 T. onion, minced
1 clove garlic, minced
1/2 lb. fresh mushrooms, sliced
1/4 c. dry red wine
juice of 1 lemon
2 beef bouillon cubes
1 c. water
2 c. wide egg noodles, uncooked
salt and black pepper, to taste
1 c. sour cream
paprika
parsley, chopped

Directions:

Melt butter; add beef, onion, garlic, and mushrooms.

Saute' until meat loses red color and onion is tender, stirring with fork to break up the meat.

Add wine, lemon juice, bouillon cubes and water.

Simmer, uncovered, for 10 minutes. Add noodles; cover and simmer for 15 minutes or until noodles are tender, adding more water if necessary.

Season with salt and pepper. Stir in sour cream and heat gently. Sprinkle with paprika and parsley.

I've been making this wonderful recipe for 30-plus years (found it in a Women's Day cookbook series). I increase the meat to 1-1/2 lbs, add a large onion, lots of fresh garlic, and I use ½ cup of good red wine. I use tons of fresh mushrooms cut into big chunks. Basically, add extra ingredients on everything. A very nice touch is some balsamic vinegar. De-lish !
