1 lb. carrots (can used the small, peeled carrots)
1/2 c. butter, melted
1/2 c. sugar
3 tbsp. flour
1 tsp. baking powder
1 tsp. vanilla
3 eggs

Directions:
Directions:
Cook carrots in salted water until tender. Drain. Add butter and mash in food processor. Add the rest of the ingredients and mix. Bake in greased casserole at 350º for 45 minutes. (If doubled, increase cooking time.)
