1/4 pound bacon
3 tablespoons olive oil
1 small onion chopped
1 garlic clove chopped
1/2 cup white wine
4 ripe tomatoes cored and cut (or use cherry tomatoes whole)
3/4 pound rigatoni, cooked
1 bunch arugula (about 2 cups) chopped with tough stems removed
3/4 cup grated Parmesan

Directions:

Cook bacon until crisp and break into pieces. Heat oil in medium saucepan. Add the onion and garlic and cook until softened 5 minutes. Add the wine, bring to a simmer and cook 1 minute. Add the tomatoes and simmer over low heat, stirring until thickened, 20 minutes. Mix pasta, arugula and sauce together and sprinkle with the Parmesan.
