6 chicken fillets
¾ cup plain flour
60g butter
2 tablespoons oil
60g butter (extra)
1 clove garlic
4 rashers bacon
6 shallots
250g mushrooms
400g can tomatoes
440g can cream of chicken soup
¼ cup dry white wine
3 tablespoons brandy
½ teaspoon sweet chilli sauce
1 teaspoon worcestershire sauce
1 teaspoon soy sauce
½ cup cream
¼ cup chopped chives

Directions:
Cut chicken filets into three pieces, toss in flour. Heat butter and oil in pan, add chicken in batches, and cook until light golden brown, remove from pan, and place in ovenproof dish. Heat extra butter in pan, add crushed garlic, chopped bacon, chopped shallots and sliced mushrooms, cook few minutes or until mushrooms are soft, add to chicken with undrained mashed tomatoes, undiluted soup, wine, brandy, chili sauce, worcestershire sauce and soy sauce; mix well. Cover, cook in moderate oven 40 minutes or until chicken is tender. Just before serving stir in cream and chives.
