1 c brown lentils cooked in salted water and drained
1 c rice cooked in salted water and drained,
1 c dry pasta cooked and drained
2 large onions sliced or chopped
2 T oil
1-2 finely chopped onions
5-7 cloves of garlic finely chopped.
2 cups of tomato sauce
1 T vinegar
salt and pepper to taste
1 diced hot pepper if desired.

Directions:

Combine the first 3 ingredients in a large bowl or pot. Fry onions until brown and crispy in 2 T oil. Drain on paper and set aside. Add oil to bean, rice, pasta mixture.

Tomato Sauce: sauté finely chopped onions in oil until soft, add garlic finely chopped. Fry to a pale brown. Add tomato sauce and simmer for 15- 20 minutes (sauce will turn dark). Add 1 T vinegar and salt and pepper, cook a few minutes longer. Can also add 1 diced hot pepper if more spiciness is desired. Pour tomato sauce over bean, rice, pasta mixture.

Sprinkle fried onions over the top as it is served.
