1 can of pink or red salmon (red is the best!)
1/2 tubes of soda crackers
2 eggs
Canola oil

Directions:
Directions:
In a bowl mix together salmon (may take out string of bones), eggs, and crushed crackers. Mix well and form into patties. Makes 6-8 patties. Place in medium high frying pan with just enough oil to cover the pan. Fry on each side for 5 minutes or until golden brown. When you flip the patty, reduce heat to medium low. Can serve with ketchup or tarter sauce.

You can make crab cakes instead by substituting a 12 oz can of crab meat for the salmon. This recipe also makes for a great appetizer. Just make mini patties- the size of silver dollars.
