Put broccoli and salt into a large kettle and add water, just enough to cover just below the top of broccoli. Bring it to a boil and simmer until tender. Remove from heat and let it cool slightly. Take small portions of broccoli and water at a time and place into a food processor or blender and process until smooth and pour back into large kettle. Once it's all processed, add milk, whipping cream, and onion salt and let it come to a simmer; stirring often. Simmer for ten minutes and add cheese if desired.
