1 cup quinoa- rinsed well
1 large tomato- 2 cups cherry tomatoes chopped into small pieces
1 hothouse cucumber chopped into small pieces
half red onion chopped into small pieces
parsley minced
mint minced (optional)
olive oil
lemon juice
salt and pepper

Directions:
Directions:
After rising the quinoa very well, cook in a pot with 2 cups of water for approx 12 minutes, or until the shell pops off. Let cool- add the vegetables and coat with olive oil and a few tbs of lemon juice. Add salt and pepper to taste. Can be made in advance.

I made this salad for a healthy breakfast or lunch. I sometimes added plain yogurt to the dressing. It is a refreshing, healthy salad.
