1 Ground Hog (preferably young)
1 tsp salt
1 tsp cider vinegar
pinch of baking soda

Directions:
Kill a young ground hog. Remove skin and take out all internal organs. Remove the little glands from under the armpits after skinning. If this is not done, the meat will not be edible. (If an old ground hog is killed, you will need to boil until tender before putting it through the soaking process.) Wash thoroughly in cold water several times. Cut into desired portions and cover with cold water. Add 1 teaspoon salt, 1 teaspoon cider vinegar and a tiny pinch of baking soda. Soak in refrigerator for 10 hours.
After soaking, roll in flour. In a large frying pan, with hot grease, place each floured piece in to fry over medium heat. Salt and pepper to desired taste. Cook to a medium brown, turning to fry both sides.
