Wash hog feet thoroughly and remove hooves. Use a butane torch to singe the hairs off the feet and ears. Put feet and ears in an enamel pot and boil in water until tender.

Wash and clean thoroughly half hog head. Repeat singe process to the head. Cook in a separate pot. After cooking, drain water and remove bones from the head. Mash the meat with hands. After feet and ears are cooked, bone and mash with hands. Add this to the mashed hog head. Season with salt, pepper, and cider vinegar to taste. Put in a mold and chill. When cold enough, remove the mold. Slice and add a little cider vinegar before eating.
