4 eggs
1/2 cup sugar
1/4 tsp. salt
1/2 tsp. vanilla
1/2 tsp. almond extract
2-1/2 cups scalded milk
nutmeg for top of pie
unbaked pie crust single

Directions:
Directions:
Line pie crust with dough and shape edges.Place in refrigerator while preparing custard filling. Beat eggs slightly.Blend sugar, salt and flavoring with eggs. Slowly pour scalded milk into egg mixture, stirring constantly. Pour custard mixture into pastry lined pie plate. Bake at 400º for 20 to 30 mins or until knife inserted in middle comes out clean. Remove pie promptly to cooling rack. Sprinkle surface with nutmeg.After cooling to room temprature, store in refrigerator.
