Saute together until tender:
1 Cup chopped onions
1 Cup chopped carrots
3 pieces of bacon cut up in small bits
1 Tbs. butter
2 Tbs olive oil

Microwave until tender:
4 Cups broccoli

Drain and add to sautéed veggies
Add 1 box (32 oz.)low salt chicken broth

Working in batches, blend the above ingredients well in a blender. Be careful to cool the ingredients first or the top of the blender might blow off and throw soup all over the kitchen and you. Statement made from 1st hand experience.

Return to pan and add 1 more box of low salt chicken broth, bring to boil and cook for 10 minute or so.

Put 2 cups of flour in quart jar, fill to almost full with water, shake well to blend.

Add flour water mixture a little at a time to the soup to thicken to desired soup consistency. Add more broth or flour mixture as needed.

Continue cooking on medium heat for 15-20 minutes.

Add:
2 Cups 1/2 & 1/2
1/4 Cup feta cheese
1 Cup Velveeta cheese cut up
10-12 slices American cheese
1 Cup shredded 4 cheese mix
1/2 Cup de-rinded brie cheese, cubed
OR any combination of cheese available (NO cheddar) until it is cheesy enough.

Cook over low heat, stirring frequently until cheese is melted and soup is hot. DO NOT BOIL!!

This soup is really easier to make with a kitchen full of people and a bottle of wine. DO NOT put the wine in the soup!!

Trying serving in homemade bread bowls. Use Grandma Naylor's french bread recipe. Form dough into small loaves. Spray lightly with water just before baking. Start cooking in 400 oven. After 15 minutes, spray again and turn over to 375. Bake until done...sounds hollow when thumped.

My grandson Patrick requested Broccoli Cheese Soup in bread bowls for this 13th birthday dinner. What we worked up was so good I had to re-create it on paper. Hope you enjoy as much as we did...not only the soup but the wine also.
