2 c white sugar
1/2 c light corn syrup
1/2 c water
2 egg whites, stiffly beaten
1 tsp vanilla
1/2 c chopped nuts (optional)

Directions:
Directions:
Cook sugar, corn syrup, and water in a 2-quart pot over low heat, stirring constantly, until sugar is dissolved. Then cook, without stirring, to 252º on candy thermometer. Remove from heat and pour, beating constantly, in a fine stream into stiffly beaten egg whites. Continue beating until mixture holds its shape and loses its gloss. Add vanilla and nuts. Drop from buttered spoon onto waxed paper. Let stand at room temperature, turning candy over once, until outside of candy is firm--at least 12 hours. ( Or spread into a buttered pan and cut into 1" squares, when firm ) Store in airtight container.
