1 egg
1/2 c. sugar
1/4 c. oil
1/2 c. milk
1 tsp. vanilla
1 1/2 c. flour
2 tsp. baking powder
1/4 tsp. salt
1 c. fresh or frozen blueberries

Directions:

Mix egg, sugar, oil, milk and vanilla. Stir in flour, baking powder and salt. Don't over mix. Fold in blueberries. Bake at 370º for 20 - 25 minutes.

Editor's note: Aunt Millie sent a very similar recipe but hers used 1/2 tsp. salt , no vanilla, and baked the muffins at 350º.
