2 to 2 1/2 lbs. lean ground beef
1/2 tsp. onion powder
1/2 tsp. garlic powder
2 tbls. curing salt (Morton Tender-Quick)
1 tbls. mustard seed
1 1/2 tsp. liquid smoke
pinch of crushed red pepper flakes
3/4 c. water

Directions:
Mix all together. Shape into 3 rolls and wrap in foil. Refrigerate 24 hours. Take out of foil and bake in a baking pan at 300º for 1 hour. Immediately wrap in new foil and let cool.(the foil keeps it moist while cooling)
