1 whole chicken or 4 Chicken Breast bone-in
5 c. cornbread-crumbled
1/2 sleeve saltine crackers-crumbled
1/2 t. salt
1 t. sugar
1/2 t. poultry seasoning
1/2 c. onion-chopped
1/4 c. celery-chopped
1 stick of butter or margarine
3 c. chicken broth (from cooked chicken)
2 eggs slightly beaten
1 can cream of chicken soup

Directions:
Place chicken along with 2 or 3 stalks of celery and 1 tbsp. salt in large pot, cover with water, enough to make 5-6 cups of broth. Simmer until tender, then remove chicken, discard celery (this just adds flavor to the broth) and reserve broth.

For Dressing: Saute chopped onion and celery in butter or margarine approx. 5-10 minutes. Set aside. In large bowl mix cornbread, crackers, poultry seasoning, salt, sugar, cream of chicken, sauted onions and celery along with 3 cups of chicken broth. Mix well. Add beaten eggs and continue to mix well. Bake in 13x9 casserole dish sprayed with Pam for 50-60 min. @ 375.
**You can add the deboned chicken to the dressing before you cook it if you want it in the dressing. I prefer it served separately.**

For Gravy: Heat 4-5 tbsp. of vegetable oil in skillet over med heat. Add 2-3 tbsp. of flour and stir till it begins to brown. Add 2-2 1/2 c. of reserved chicken broth and continue stirring until it begins to thicken. Reduce heat to low and add 2 boiled eggs chopped and 1/2 c. of the chicken chopped.
