2 c. sugar
2 c. light corn syrup
4 sticks butter
2 c. heavy cream
2 tsp. vanilla extract
8 c. pecan halves or pieces

Line 2 baking sheets with foil. Spray foil with nonstick vegetable spray.

In a large saucepan over medium heat, combine sugar and corn syrup. Heat to 250º F on a candy thermometer. Remove from heat and stir in butter until melted. Gradually stir in cream. Return to heat, Cook, stirring constantly, until temperature reaches 242ºF. Remove from heat and stir in vanilla and pecans. Drop by spoonfuls onto prepared pans. Cook completely and then wrap in plastic.
