1/3 c olive oil
1/4 c red wine vinegar
1 1/2 t red pepper sauce
3/4 t salt
2 cans (16 oz each) black beans, drained and rinsed
2 cans (11 oz each) corn, drained and rinsed
2 lg tomatoes, chopped
2 ripe avocados, pitted, peeled and diced
4 scallions, sliced
2 T fresh cilantro, chopped
Corn Chips

Directions:

Combine oil, vinegar, pepper sauce and salt in a large bowl; mix well. Stir in black beans, corn, tomatoes, avocado scallions and cilantro; toss until well blended.

Let stand for 1 hour before serving. Serve w/ corn chips.
