1 lb. White Beans, dry
2 qt. Water, cold
Meaty Ham Bone
1/2 tsp. Black Peppers, whole
Bay Leaf
Onion, sliced
Salt & Pepper

Directions:
Directions:
Wash the beans and place in a large sauce pot. Cover with water and bring to a boil. Boil gently 2 minutes. Remove from heat. Cover and let stand 1 hour. (Do not drain.) Add the ham bone, black pepper and bay leaf. Cover, heat to boiling and boil gently 3 to 3 1/2 hours. Place the ham on a plate; let cool so you can remove the meat from the bone. Add ham to beans. Add onion the last 1/2 hour. Mash a few beans in the saucepot with a potato masher. Season to taste with salt and pepper and serve.
