4 c. Flour
1 1/2 tsp. Salt
1 1/2 tsp. Sugar
1 pkg. Active Dry Yeast
1 c. Water, warmed
2 T. Oil
2 Eggs, beaten
2 qt. Water
2 T. Sugar

Directions:
In a large bowl, place yeast in warm water and let it dissolve about 5 minutes. Add salt, 1 1/2 tsp. sugar, oil and eggs. Beat well. Gradually add 4 c. flour and work it in until the dough forms a ball. Turn out on a floured surface and knead about 5 minutes. Place dough back into the bowl which has been greased and cover with a towel. Let rise about 1 hour. Turn out on lightly floured surface and cut into 15 pieces. Work into a round bagel and make a hole in the middle with your fingers. When they have risen again, carefully drop into a pan containing the 2 qt. water and 2 T. sugar which has been brought to a boil. When the bagel rises to the surface of the water, roll it over and boil for another minute. Remove from water and place on lightly greased baking sheet. Bake at 450º until golden and crisp (approx. 10-15 minutes). Cool.
