6 tbsp. unsalted butter
1/2 lb. elbow macaroni
6 tbsp. flour
3 c. whole milk
1 tsp. salt
1/4 tsp. black pepper
pinch cayenne
2 1/2 c. grated cheddar cheese

preheat oven to 350. Butter a 2 quart baking dish with 1 tbsp. of the butter and set aside.
Boil large pot of salted water. Add macaroni and cook until al dente, about 10 minutes. Rinse under cold water and drain well.
Melt 5 tbsp. butter in 3 quart saucepan over medium heat. Add flour, and stirring constantly with a wooden spoon, cook over med. heat for 3-4 minutes. Using a whisk, add milk and cook, whisking constantly, until thick and smooth, about 4 minutes. Remove from heat. Add salt, pepper, cayenne, and 2 cups cheese, and stir well. Add noodles and stir well. Pour into buttered dish. Sprinkle top with remaining cheese and bake until golden brown and bubbly, about 25 minutes.
Remove from oven and let rest 5 minutes before serving.
