1 1/2 c. self-rising flour
3/4 c. milk
3 T. shortening or drippings, divided

Directions:
Directions:
Put flour in a bowl. Slowly add milk while stirring until the batter is a consistency stiffer than pancake batter, but not as thick as biscuit batter. In a heavy skillet, add two tablespoons of shortening and heat until hot, but not smoking. Pour in batter, cover with lid and lower heat. When cake is crispy on bottom, add the remaining shortening to the top of the hoe cake and flip over. Continue to cook until crispy. Good with butter or syrup.
