3 cups shortening
2 cups sugar
4 eggs,well beaten
4 cups baking molasses
1 pint buttermilk (with baking soda)
3 Tbsp baking soda
15 cups flour (5lbs minus 3 cups)
3 Tbsp cinnamon
2 Tbsp nutmeg
4 Tbsp ginger
1 Tsp salt
1 Tsp Cloves

Mix in order given, beating well. Then blend in dry ingredients and buttermilk alternately. Roll on heavily floured board or pastry cloth, being careful not to pick up much additional flour.
Bake at 400º, 12-14 minutes depending on thickness.

Start on bottom shelf - rotate at half time top shelf. Do not grease cookie sheets. Sift flour.
Put buttermilk in a large bowl before & adding baking soda (it foams up)
