1 lb Italian Sausage
1 Green Pepper, sliced
3 C fresh Mushrooms, sliced
1 med Onion, chopped
Salt and Pepper to taste
3 C Mafalda pasta, uncooked (mini-lasagna)
2 1/2 C Water
1/2 tsp Italian Seasoning
26 oz Spaghetti Sauce
1 C Low-Fat Mozzarella Cheese

Directions:
Directions:
Crumble the sausage into a large fry pan and brown with green pepper, mushrooms, onion, salt and pepper. Drain sausage mixture and place back in pan. Stir in remaining ingredients and bring to a boil. Reduce heat and simmer for 10 to 15 minutes or until pasta is tender. Sprinkle with cheese.

This recipe came from my very first cookbook my mom gave to me in 2006. This would also be good with other pizza toppings like pepperoni.
