1 quart of fish, cut into pieces
2/3 c. of pickling salt
white vinegar
1 c. white vinegar
1 c. sugar
1/4 c. pickling spices (in bag)
1/2 c. wild Irish Rose Wine

Directions:
Directions:
Put 1 quart of fish in small pieces in a plastic pail with 2/3 c. of pickling salt and cover with white vinegar. Let set 5 days; stir every day. After 5 days, wash off fish until salt is all off. Put in cold water and squeeze off water. Cook 1 c. white vinegar and 1 c. of sugar, 1/4 c. pickling spices (in a bag) then cool and add 1/2 c. Wild Irish Rose Wine and pack fish & onion in jars and cover with brine. Let set 5 days before eating.
