2 cups fresh, whole kernel white or yellow corn
2 large tomatoes, diced
1-2 large jalapeņo peppers, seeded and diced
3 green onions, sliced
1/2 cup purple onion, finely chopped
1/3 cup finely chopped flat leaf parsley
1/4 cup finely chopped red bell pepper
1 (4.5-ounce can chopped green chilies with liquid
1/2 cup light olive oil
1/3 cup red wine vinegar
2 tbsp. lemon juice
1-1/2 tsp. ground cumin
1/4 tsp. black pepper
1/4 tsp. hot sauce

Combine corn and remaining ingredients, toss gently. Cover and chill at least 4 hours.
