12 vanilla wafers
2 egg yolks
11 oz. cream cheese
3 TB. milk
3 oz. semi-sweet chocolate, melt and cool
1 1/2 tsp. vanilla
2/3 c. sugar

Line foil muffin cups with a vanilla wafer. Beat cream cheese and chocolate to combine; add the rest-just to combine--do not over beat! Spoon into muffin cups, bake @ 350º for 20 min. Cool for 5 min. Remove and (did I tell you to put the foil liners in a muffin tin?) cool on wire rack for 1 hour. Pipe cool whip or whipped cream in the center of each mini cheese cake. Cover and chill 4-24 hours.

I made these for Katie's baby shower and they seemed to be a huge hit and have been gaining popularity ever since--their next showing was Annie's bridal shower where they were equally well recieved!! VARIATION: Cherry Mini Cheese Cakes- 12 vanilla wafers, 1 egg, 8 oz. cream cheese, 1/2 c. sugar, and cherry pie filling. Follow Auntie Sher's directions, (I bake for 12-15 min.) Chill, then top with pie filling. These are very popular with my kids.
