4 qts. cucumbers, unpeeled, thinly sliced
5 c. Vidalia onions, thinly sliced
2 c. red bell pepper, thinly sliced
2 c. green bell pepper, thinly sliced
1/2 c. pickling salt
1 10-lb. bag of ice
1 1/2 tsp. turmeric
2 tsp. celery seed
1 T. mustard seed
5 c. sugar
5 c. vinegar

Directions:
Slice cucumbers into very thin slices; onions and peppers into very thin strips. Place in a very large container, add salt and cover with ice. Mix well and let stand overnight. Next day: Drain, rinse and place in a large pot. Add seasonings, sugar and vinegar, mix well. Bring to a boil, pack and seal in sterilized jars. Process for 15 minutes in boiling water bath. Makes about nine or ten pints.
