1 1/2 pounds tenderized round steak
Salt and pepper to taste
1/2 cup flour
1/4 cup canola oil
1 medium onion, chopped
1/2 green pepper (optional)
1 1/2 cups water
1 cup shredded Sharp Cheddar or cheese of choice

Trim fat from steak and cut into serving pieces
Season meat and dredge lightly in flour
Heat oil in skillet large enough to saute' all the steak pieces
Lightly brown steak on both sides
Add the chopped vegetables and water
Reduce heat to high simmer and cover
Cook 30 to 40 minutes, adding more water if necessary
Remove cover and sprinkle cheese over the steak
Turn off heat and return cover until ready to serve
Serve with mashed potatoes or rice
