1 cup olive oil
1/3 cup lemon juice (fresh squeezed is best)
2/3 cup minced fresh parsley (optional)
2 teaspoons minced garlic
1 teaspoon salt
1 tablespoon coarse cracked pepper (I use more because we like a lot of pepper)
3-4 pounds pork tenderloin

Mix above ingredients. Marinate pork tenderloin with mixture in ziplock bag. Drain off marinade and grill meat to desired doneness. Let cool for a few minutes then slice to desired thickness.

Also great for sandwiches. I grill on high for the first few minutes. Grill will flare up when first placed on rack due to oil, but this helps sear the outside of the meat. I then turn down the heat and cook slower.
