Serves 4-6
10-12 ripe Roma tomatoes, diced with their juice
4 medium zucchini squash, sliced like thin coins, optional
1 med diced onion
4-6 cloves minced garlic
1 TBL dried Italian seasoning
12 or more fresh sliced basil leaves
˝ cup fresh grated parmesan cheese
˝ cup Feta Cheese
Toasted pine nuts, optional
small can V-8 or tomato juice
Extra virgin Olive oil

1 pound whole wheat angle hair or spaghetti noodles

Directions:
Directions:
Sauté onion in 3 TBL Olive oil, add garlic, cook several minutes, add tomatoes, and Italian seasoning, and bring to a simmer. Add zucchini, simmer about 20 minutes adding V-8 to make a nice sauce.

Cook pasta as per package directions, DO not over cook. Drain and place in a large pasta bowl. Pour sauce on and toss lightly, keeping most of the tomato and squash chunks on top. Sprinkle with sliced basil, pine nuts, and both cheeses, lightly toss again. For a hurry up meal canned diced tomatoes can replace Romas.

Serve with hot sour dough baguettes and butter, More cheese on the side.
