3 Red Peppers
3 Medium tomatoes, cored.
1/4 t. ground cumin
1 t. ground coriander
1 t. chopped chili
freshly ground pepper to taste
2 t. chopped fresh mint
1 clove garlic
4 lamb chops, trimmed of fat.
fresh cilantro leaves, for serving

Directions:

1. Preheat oven to hot 500º. Place peppers on sprayed pan and bake in oven for 15 min. (you can grill them too, be sure to use foil or they will fall thru grates)
Add tomatoes and cook another 10 minutes.
2. When cool enough to handle, remove blackened skin from peppers and tomatoes. Place flesh in blender or processor. Add cumin, coriander, chili, pepper, mint and garlic. Process until smooth; set aside.
3. Grill lamb steaks as desired.
4. Place some Roasted Pepper Sauce on each plate, top w/ a grilled lamb steak. Add a few sprigs of fresh cilantro.
