Ingredients: Marinade: 1 pound Nigari tofu, cubed (or chicken, steak or shrimp) 1/4 cup soy sauce 1/4 cup cider vinegar 2 tablespoons sherry 2 tablespoons brown sugar 4 teaspoons sesame oil 1/2 teaspoon each: ground ginger, cayenne pepper,garlic powder, cinnamon, ground coriander Yogurt Sauce: 1 cup plain yogurt 1 teaspoon curry powder 1/2 teaspoon cayenne pepper 1/2 teaspoon cumin Filling: 2 tablespoons olive oil 1 small red onion 2 tablespoons garlic, minced 2 medium green bell peppers, sliced 4 ounces button mushrooms 2 medium tomatoes, chopped 1/2 bunch cilantro Pinch salt Pinch pepper 10-12 pitas or soft taco tortillas

Directions: In a large bowl whisk together marinade ingredients; pour over tofu or meat and marinate at least 4 hours or overnight Whisk together the yogurt sauce; cover and refrigerate Bake tofu on a sheet pan with a little marinade drizzled around at 350º for 30 minutes or until firm If using chicken, steak or shrimp saute' in pan with a little marinade just until cooked In a large pan saute' onions in olive oil until tender; add mushrooms and garlic and saute' about 5 minutes Add bell pepper and saute' an additional 2 minutes Add the tofu or meat, cilantro, tomatoes, salt and pepper; cook until tomatoes are heated being careful not to over cook Serve Fajitas in a pita or tortilla drizzled with the yogurt sauce |
