1/2 lb. apple smoked bacon, chopped
1 cup quick grits
3 cups water
1 tsp. salt
1 cup shredded cheddar
1 cup chipotle salsa
1/2 stick butter
salt and pepper to taste

Directions:
Directions:
1. Cook bacon in large frying pan until crisp. Remove from pan and drain on paper towels.
2. Reserve 1/4 cup bacon fat, set aside.
3. Prepare grits according to the package instructions.
4. Stir in the cheese, salsa, butter, bacon fat and the cooked bacon. Season with salt and pepper.
