3 very ripe bananas - mashed
3 eggs
1 1/2 c sugar
1/2 cup oil or butter
1/4 c vinegar
1/4 c milk
1/2 tsp salt
1 tsp vanilla
2 c flour
1 tsp baking soda
1/2 c chopped nuts (optional)

Directions:
Directions:
Mix milk and vinegar, mix all wet ingredients plus sugar and salt, then add then add flour and soda. Mix until well blended, add nuts at the last minute. Makes a 9x13 flat cake or two 8 inch rounds. Also makes good cup cakes and small bread loaves.

This is from the Pontius cookbook. Gene Marie always said it was from Dorothy Car and it was one of her favorite cakes to make. Growing up we had this frosted for many birthdays.
