Shrimp Taco Salad

Ingredients:
1 pound of uncooked large Shrimp
(I use Cooked Salad Size)
1 envelope Taco seasoning, divided
½ cup plus 3 Tbl. Cider vinegar
1 small onion, finally chopped (Heb carries them
Already chopped)
2 Tbl. Spoons diced green and red peppers
(Heb carries them already chopped)
6 garlic cloves, minced
½ teas. Coriander
¼ teas. Sugar
1 package ready to serve salad greens
1 medium tomato, chopped (I don’t use)
1 Can Black Beans, rinsed and drained
2 cups (*ounces) finely shredded
Colby-Monterey Jack Cheese

Directions:
Directions:
Place Shrimp in bowl, sprinkle with half of the taco seasoning. Set Aside.
In another bowl, combine ½ cup of oil, onion, vinegar, I sauté this all in a skillet
Once the Onion & Bell Peppers are sautéed I add everything to my skillet except the
Salad greens and heat up for just a little while then I let sit and cool completely then
I add all this to a big bowl with the salad greens then I add the Cheese and I get chips and
Break them up an add to the top when serving.
