5 lbs. New potatoes, scrubbed and halved
1/4 c. olive oil
2 cloves garlic, peeled and roughly chopped
2-1/2 T. fresh parsley, roughly chopped
2 tsp. fresh tarragon, roughly chopped
2 tsp. fresh thyme leaves, roughly chopped
1/2 tsp. Dried oregano leaves
2 medium Leeks, halved lengthwise, cleaned and sliced
Cooking spray as needed
Kosher salt and fresh ground black pepper, to taste

Directions:
Preheat oven to 350º. Place potatoes in a large bowl; drizzle with oil and toss well to coat. Add garlic, parsley, tarragon, thyme and oregano; toss well to combine and season with salt and pepper to taste. Place potatoes in a single layer on a large baking sheet sprayed with cooking spray. Roast potatoes for 20 minutes. Add leeks and stir. Continue roasting potatoes, stirring occasionally, until tender and golden brown, about 1 hour to 1 hour and ten minutes. Serve immediately.
