3 tablespoons olive oil
1 cup onions, chopped
2 tablespoons chopped garlic
8 cups chopped tomatoes (fresh or canned)
1/2 cup fresh chopped parsley
1 teaspoon oregano
1 teaspoon crushed red pepper
1/8 cup fresh chopped sweet basil
Pinch of thyme
Pinch of rosemary
1 teaspoon salt
1 teaspoon pepper

Directions:
Directions:
Lightly saute' the onions in olive oil in a large pot until tender
Add garlic and saute' another minute
Add tomatoes and bring to a boil, then reduce heat to low before adding the rest of the ingredients
Stir, cover and let simmer for one hour, stirring frequently
