1/4 c. oil
4 medium onions, diced
4 medium garlic cloves
Saute above.
16 lbs. peeled and diced tomatoes (3 ice cream pails)
2-12 oz. cans tomato paste
1/4 c. sugar
1/4 c. parsley
2 T. oregano
2 T. salt
2 tsp. basil
3/4 tsp. cracked pepper
2 Bay leaves (discard after cooking)

Combine all ingredients after sautéing vegetables. Pour in large turkey roaster or 2 large Dutch ovens. Bake at 350º for 2 hours - uncovered. When done remove bay leaves; pour into quarts or pints. Put in hot water bath for 15-20 minutes.
