4 1/2 c. milk
2/3 c. rice
2/3 c. sugar
1/4 tsp. salt
2 eggs
1 tsp. vanilla
1/4 tsp. cinnamon

Directions:
Directions:
In 10 inch skillet over high heat; heat milk, rice, sugar and salt to boiling. Reduce heat to medium and cook uncovered 20 minutes. In small bowl; with fork, beat eggs slightly. Stir in small amount of hot rice mixture. Slowly pour egg mixture back into rice mixture, stirring rapidly to prevent lumping. Cook over low heat until rice mixture is slightly thickened, about 1 minute. Do no boil. Remove from heat, stir in vanilla and cinnamon. Store in refrigerator.
