1/4 Cup butter
1/4 cup light cream
1 T Lemon juice
2 egg yolks beaten (or one egg)
1/2 tsp dry mustard
1/4 tsp salt

Directions:
Directions:
Microwave butter about 1 minute on roast

Stir in remaining ingredients following the order listed, then beat with rotary beater till smooth

Microwave 1 minute on roast. Beat well and continue cooking about 1 minute more or until thickened

Beat lightly and serve (can be made ahead of time, just reheat and beat. If sauce curdles, beat well, and if necessary add 1 tsp of hot water and then beat.)
