2 lbs. zucchini (sliced into 1/2 inch pieces)
1 L water
2 tbsp. Maggi
3 triangles of Laughing Cow cheese

Directions:
Directions:
Place zucchini and water in a pot. Bring to a boil. Reduce heat to medium-high. Add Maggi. Cook for 20 minutes. Add Laughing Cow cheese. Stir. Reduce heat to low. Cook for 20 minutes or until zucchini is tender. Remove from heat and allow to cool. In batches, blend in a blender. Reheat over low heat. Serve.

Maggi is a flavored brown liquid used in Europe. Think of it as beef broth with a punch! A substitute for Maggi would be a boullion cube.
I also add croutons. Easily made: cube white bread. Sautee in butter. While cooking sprinkle with garlic powder. Cook until crispy. I also pour a little truffle flavored olive oil on top of the soup before serving.
