2 tbsp. olive oil
1 medium onion, thinly sliced into rings
1 tbsp. yellow curry powder
1 tbsp .red curry powder
1/2 c. yogurt
1 c. heavy cream
salt & pepper to taste
1 14.5 oz. can of tomatoes (drained & chopped)
1 package pre-cooked chicken pieces
1/2 c. fresh chopped fresh cilantro

Directions:
Directions:
1. Heat olive oil over medium-high heat and add onions.
2. Cook & stir until onions are soft.
3. Add red and yellow curry powders. Cook & stir 2 minutes.
4. Add yogurt and heavy cream. Stir. Reduce heat to low. Cook & stir 3 minutes.
5. Add tomatoes. Stir. Cook another 3 minutes.
6. Add chicken. Stir. Cook until heated through.
7. Add cilantro. Stir. Cook 1 minute.

Serve over rice (which can cook while you are preparing the dish).
