½ C potato flakes or buds
2 eggs
2 C very warm water
¼ C butter, softened
2 pkg dry yeast
6 ½ C unbleached flour
½ C sugar
1 Tbsp salt

Cover potato flakes with very warm water. When dissolved add sugar,salt, & yeast. Let sit a
Few minutes until yeast is foamy. Add 2 eggs, butter, and 3 cups flour. Beat until smooth. Add
Remaining flour to make a soft dough. Let rise, covered, till doubled. Punch. Divide into 3 balls.
Roll each into a 12 to 15 inch circle, very thin. Spread with very soft butter. Cut into 12 to 15 wedges. Roll up and place on baking sheet. Cover with plastic and let rise till double. Bake at 400 degrees for about 12 minutes, till golden brown.
