750gms (1 1/2 lb) onions, 1kg (2lb) green tomatoes, 1 small cauliflower, 500gm (1lb) beans, 1L (2pt) Vinegar, 1kg (2lb) brown sugar, 2 tsp ground tumeric, 2 tsp mustard powder, 2 tsp curry powder, 1/2 tsp ground ginger, 1 cup plain flour.

Wash and chop vegetables, Place in a large bowl, sprinkle with salt. Stand overnight. Drain vegetables, rinse in cold water. Place 750ml Vinegar and the sugar into a large saucepan. Bring to the boil, add vegetables, bring back to the boil. Mix all dry ingredients with remaining vinegar and add to vegetable mix. Stir constantly until thickened. Reduce heat and simmer for 10mins. Pour into sterilized jars and seal.
