This is the basic Quiche. Put what ever combinations of meat and vegetables you like in yours, this makes 2 Quiches
2 unbaked pastry shells
3 cups cheese, Swiss is the classic but you can use your favorites.
8 eggs
2 cups half and half
tsp salt
tsp pepper

Line pie crust with double thickness heavy foil pressed into it. Bake 400 5 minutes. Remove foil, bake 5 more minutes.
Sprinkle bottoms with cheese and spices, see below. In a large bowl beat eggs and half and half, salt and pepper, fold in your meats and veggies. Pour evenly over cheese. Cover and freeze one Quiche if you want for up to 3 months. Bake other on a baking sheet. Bake at 400 for 35-40 minutes until knife inserted into center comes out clean. Let stand 10 minutes before cutting.

Cook all veggies crisp tender, cook meat through, ham and lunch meat no need to cook. Top some with fresh salsa, sour cream

**Florentine: Crisp cooked bacon, cooked and drained, squeezed spinach, onions **Mushrooms, onions, Broccoli **Ham, Cheddar, bell pepper, onions
**Ortega chilies, Jack cheese, black olives, cilantro , chili powder
**Pizza, pepperoni, Mozzarella, Provolone, Parmesan cheeses, What ever you like on a pizza! **Vegetarian, Tomatoes, squeeze out seeds and juice, zucchini, basil, mushrooms, onions. Get creative.
