2 1/2 c. unbleached flour
1/4 tsp. salt
3 or 4 large eggs
2 tsp. oil (optional)

Directions:
Directions:
Mix together the flour and salt. Make a well in the center, and add eggs and oil. Mix until you have a stiff dough. If too stiff, add water 1 T. at a time until dough is right consistency. Let dough rest under a glass bowl for at least 30 minutes, up to 3 hours. Roll dough to 1/4" thick. Roll up jelly roll style, and slice. Unroll noodles and drop into boiling broth. Cook until tender.
