1/3 cup all purpose flour
1 tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/3 cup cornmeal
1 egg
1 cup sour cream
Vegetable oil, melted shortening or bacon fat

Directions:
Directions:
1. Preheat oven to 400º.
2. Sift flour, sugar, baking powder, baking soda and salt into bowl. Stir in cornmeal. Beat egg with sour cream and 2 tbsp. oil; stir into dry ingredients just until moistened.
3. Generously grease and 8-inch cast iron skillet, cornstick pan or 8-inch square baking pan. Place pan in oven to heat. Remove, add batter and bake about 25 minutes, until golden.
