Lemon Sunshine Bread Recipe

1 1/2 c. all purpose flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1 tbsp. grated lemon rind
1/2 c. softened butter
1 cup sugar + 2 tbsp.
2 eggs
1/2 c. milk
5 tsp. lemon juice

Combine dry ingredients
Cream butter and add 1 cup sugar. Add eggs one at a time and beat.
Alternate adding dry ingredients and milk to the creamed mixture above.
Stir in 3 tsp. lemon juice.
Bake in an 8 by 5 inch loaf pan at 325F for 1 hour and 10 minutes or until toothpick comes out dry.
Combine remaining 2 tbsp. sugar with 2 tsp. lemon juice and brush on top of the cooked bread.
Cool and enjoy!
