4-6 Very Ripe Tomatoes (fresh summer ones are best)
1 cup Bisquick (or use a pre-made pie crust)
1/4 cup milk
1 cup grated sharp Cheddar cheese (or enough to cover)
1 cup mayonnaise
1/2 cup sliced Vadalia (sweet) onions, sliced
Chives, basil, salt and pepper to taste

Butter pie or casserole dish. Scald tomatoes, peel and then cut into 1/2" slices. Mix Bisquick with milk. Pat into pie or casserole pan. Bake for 10 minutes at 400ºF. Layer first with tomato, sprinkle herbs on top. Then add a layer of sliced onion. Cover with mayonnaise. Then add cheese on top to cover. Bake for 30 minutes at 400ºF.
